They use the same engine, as far as I know, so why don't they make it easier to use instead of having to type things into chat in order to open inventory and perform functions?
Why doesn't our RP mod have an interface similar to gmod?

It's not lau files. It's .lua files as in it uses plugins from the programming language known as Lua which is a lightweight programming language most commonly used for game addons (because of it's light weight nature).

Also ,a gui would be more annoying than helpful...
just bind useful commands like /items.
Imagine if everytime you wanted to do something instead of typing or clicking on things it was a popup and it was like HELLO I AM TERH GUI USE ME. Would be bad. Also ,if you were interacting with the menu and someone saw you it would be harder to get out of the menu before you died.ToastyToast71, Professional Gravedigger.
